Warm Beet Spaghetti & Blue Salad
Serves: 4 — prep time: 20 min — Cook time: 5 min
10 oz spring mix
10 oz Beet Veggie Spaghetti
1/4 cup blue cheese dressing
1/3 cup walnuts
4 sunny side up eggs
1/4 cup balsamic vinaigrette
2 Sky Valley Navel Oranges segmented
Lay out spring mix and top with cooked beet veggie spaghetti that has cooled, so it is warm to the touch.
Toss with the blue cheese dressing, and top with an egg.
Garnish with walnuts and Sky Valley orange segments.
