Tuscan Broccoleaf Soup
SErves: 4-6 — Prep time: 15 min — cook time: 30 min
3/4 lb Italian Sausage
1 1/2 lb Potato Medium dice
3 cups Chicken Stock
1 cups Water
1/2 cup Onion Small dice
1 clove garlic Minced
1 1/2 cup Broccoleaf
1 cup Cream
4 strips bacon Crumbled
Fully cook bacon and sausage. Set aside.
In large pot, combine potato, stock, water, onion, garlic, and salt and pepper to taste.
Bring to boil, then reduce heat and simmer 20 minutes until the potatoes are tender. Stir occasionally.
Stir in Broccoleaf, cream, bacon, and sausage. Bring to boil again, then reduce heat and simmer 5 minutes or until Broccoleaf is tender.
