Thai Peanut Sweet Potato Veggie Spaghetti
Ingredients — Serves 4
Crazy Fresh Sweet Potato Veggie Spaghetti
1/3 cup peanut butter
1/4 cup honey
2 tbsp tamari (gluten free soy sauce)
1 tbsp rice vinegar
1/2 tsp Sriracha
Combine all ingredients except the veggie spaghetti in a bowl. Mix well.
Sauté the veggie spaghetti in a little oil for 3-5 minutes over medium heat.
Toss veggie spaghetti with other ingredients.
Top with crushed peanuts to complete the dish.
Serve with grilled pork, and enjoy!
