Thai Peanut Sweet Potato Veggie Spaghetti

Ingredients — Serves 4

  • Crazy Fresh Sweet Potato Veggie Spaghetti

  • 1/3 cup peanut butter

  • 1/4 cup honey

  • 2 tbsp tamari (gluten free soy sauce)

  • 1 tbsp rice vinegar

  • 1/2 tsp Sriracha


  1. Combine all ingredients except the veggie spaghetti in a bowl. Mix well.

  2. Sauté the veggie spaghetti in a little oil for 3-5 minutes over medium heat.

  3. Toss veggie spaghetti with other ingredients.

  4. Top with crushed peanuts to complete the dish.

  5. Serve with grilled pork, and enjoy!
