Sauteed Pear & Cream Sauce
1 tablespoon butter
2 tablestoon shallots
2 medium pears firm, medium dice
1/3 cup pear brandy
1/2 cup chicken broth
1/3 cup Cream
1 tablespoon tarragon chopped
Salt and pepper to taste
In a sauté pan, melt butter over medium heat.
Sauté shallots in butter until tender (approximately 2 minutes).
Add pears and sauté until caramelized (approximately 4 minutes).
Add pear brandy, cream, chicken broth and tarragon, stirring frequently, until thick and creamy.
Add salt and pepper to taste.
Serve immediately over your favorite meat.
