Sauteed Pear & Cream Sauce


Ingredients — Serves 4

  • 2 medium pears medium dice

  • 1/2 cup chicken broth

  • 1/3 cup pear brandy

  • 1/3 cup Cream

  • 2 tbsp shallots

  • 1 tbsp butter

  • 1 tbsp tarragon chopped

  • Salt and pepper to taste

Instructions

  1. In a saute pan, melt butter over medium heat.

  2. Saute shallots in butter until tender (approximately 2 minutes).

  3. Add pears and saute until caramelized (approximately 4 minutes).

  4. Add pear brandy, cream, chicken broth and tarragon, stirring frequently until thick and creamy.

  5. Add salt and pepper to taste.

  6. Serve immediately over your favorite meat, and enjoy!
