Ratatouille


Ingredients — Serves 4

  • 1 tablespoon butter

  • 1 cup tomato 1/2 inch cubed

  • 1 cup zuccini 1/2 inch cubed

  • 1 cup bell peppers assorted colors, 1/2 inch cubed

  • 1 cup Onion 1/2 inch cubed

  • 1 cloves garlic finely chopped

  • 1 tablespoon herbs de Provence

  • Salt and pepper to taste

Instructions

  1. In a large skillet, melt butter over medium high heat.

  2. Add onions and herbs and cook until tender (approximately 3 minutes).

  3. Add bell peppers and cook until tender (approximately 3 minutes).

  4. Add eggplant, tomato and zucchini; cook until tender.

  5. Add salt and pepper to taste and enjoy!
