Ingredients — Serves 4
1 tablespoon butter
1 cup tomato 1/2 inch cubed
1 cup zuccini 1/2 inch cubed
1 cup bell peppers assorted colors, 1/2 inch cubed
1 cup Onion 1/2 inch cubed
1 cloves garlic finely chopped
1 tablespoon herbs de Provence
Salt and pepper to taste
In a large skillet, melt butter over medium high heat.
Add onions and herbs and cook until tender (approximately 3 minutes).
Add bell peppers and cook until tender (approximately 3 minutes).
Add eggplant, tomato and zucchini; cook until tender.
Add salt and pepper to taste and enjoy!
