Cook beef in a pot over medium-high. Heat 8 minutes or until beef crumbles and is no longer pink.
Stir in taco seasoning until incorporated. Remove beef mixture with a slotted spoon and set aside.
Cook pumpkin or squash in same pot for 7 minutes.
Stir in beef mixture, black beans, salsa, soup starter kit, and beef stock.
Bring to a boil; reduce heat to low and simmer 20 to 25 minutes or until pumpkin is tender.
