Pickled Beet Veggie Spaghetti and Onion

Serves 6 — Prep time: 1 hour

Ingredients —

  • 1/2 cup apple cider vinegar

  • 1 tablespoon sugar

  • 1 1/2 teaspoon kosher salt

  • 1/2 teaspoon dry mustard

  • 1 red onion thinly sliced

  • 1 package Crazy Fresh Beet Veggie Spaghetti

Instructions

  1. Whisk first four ingredients and 1 cup of water in a small bowl until sugar and salt dissolve.

  2. Place onion in a jar; pour vinegar mixture over. Let sit at room temperature for 1 hour. This can also be made 2 weeks ahead.

  3. Cover and chill. Drain onions before using.
