Parsley Walnut Pesto

Ingredients — Serves 4

  • 2 cloves garlic minced

  • 1 cup walnuts toasted

  • 1 1/2 cups flat-leaf parsley packed

  • 1/4 cup olive oil extra virgin

  • 2 tbsp lemon juice

  • sea salt to taste


  1. With food processor running, drop in garlic and process until minced.

  2. Turn off processor, scrape down sides and add walnuts, parsley, olive oil and lemon juice.

  3. Season to taste with salt and thin with extra olive oil to achieve desired consistency.

  4. Serve immediately with your favorite pasta, or refrigerate or freeze in airtight container until ready to use.
