Lemon Poppyseed Pancakes


Instructions

  1. Stir together baking mix, poppy seeds, and half of the lemon zest.

  2. Whisk together club soda, egg, and butter in a small bowl

  3. Gently whisk egg mixture into poppy seed mixture. Mixture will be lumpy. Let stand 3 minutes.

  4. Cook batter in a preheated, oiled waffle iron until golden (1/2 cup batter each).

  5. Top with mixed yogurt and the remaining lemon zest and salsa.

Ingredients — Serves 4

  • 1 box pancake mix

  • 1-2 tbsp poppyseeds

  • 1 tbsp lemon zest

  • 1 1/4 cups club soda cold

  • 1 large egg lightly beaten

  • 1/4 cup butter melted

  • 1/2 cup yogurt

  • 1 container Crazy Fresh Strawberry Salsa

  • maple syrup to taste

  • mint garnish
