Lemon Poppyseed Pancakes
Stir together baking mix, poppy seeds, and half of the lemon zest.
Whisk together club soda, egg, and butter in a small bowl
Gently whisk egg mixture into poppy seed mixture. Mixture will be lumpy. Let stand 3 minutes.
Cook batter in a preheated, oiled waffle iron until golden (1/2 cup batter each).
Top with mixed yogurt and the remaining lemon zest and salsa.

1 box pancake mix
1-2 tbsp poppyseeds
1 tbsp lemon zest
1 1/4 cups club soda cold
1 large egg lightly beaten
1/4 cup butter melted
1/2 cup yogurt
1 container Crazy Fresh Strawberry Salsa
maple syrup to taste
