Jamaican Banana Cake

Serves 10 — prep time: 15 min — cook time: 60 min

Ingredients —

  • 5 bananas diced

  • 3 eggs

  • 1 20 oz can pineapple crushed w/ juice

  • 3 cups flour

  • 2 cups white sugar

  • 1.5 cups vegetable oil

  • 1.5 cups pecans chopped

  • 1 tsp vanilla extract

  • 1 tsp Salt

  • 1 tsp baking soda

Instructions

  1. Preheat oven to 350 degrees.

  2. Mix together sugar, vegetable oil, pecans, flour and bananas in a large bowl. Do not mash the bananas.

  3. Stir in the eggs, pineapple (with juice), vanilla, salt and baking soda. Mix well.

  4. Pour into a 9x13in pan, and bake for 60 minutes or until cake tests done by inserting a toothpick. When it comes out clean, it’s done.

  5. Let cool, and enjoy!
