Fried Halibut with Pineapple and Guacamole

Ingredients — Serves 4

  • 1 lb spring mix greens

  • 1 tub Crazy Fresh Authentic Guacamole

  • 4 rings of pineapple

  • 2 lbs halibut cut into 4 pieces

  • 2 tbsp butter

  • 11 tbsp vegetable oil

  • Salt and pepper to taste


  1. In a large very hot pan, add 1 tablespoon of vegetable oil. Swirl pan to coat and let it get hot.

  2. Salt and pepper the halibut and drop the sh into the pan. When sh is cooked halfway through, turn over and add butter. Use a spoon to baste the sh until fully cooked.

  3. Remove sh and sauté pineapple in pan until brown on both sides.

  4. On a large plate, put a handful of the spring mix. Place the sh on top. Top with pineapple ring and a spoonful of guacamole. Enjoy!
