French Onion Soup


  1. Heat a large pot over medium high heat. Heat oil and melt butter in the pot.

  2. Add onions, season with salt and pepper and fresh thyme. Cook onions 20 minutes, stirring frequently, until tender and caramelized.

  3. Add bay leaf and sherry to the pot, and deglaze the pan. Add beef stock and cover pot to bring soup to a boil.

  4. Ladle soup into bowls, add bread on top, sprinkle with cheese and then microwave on high until cheese is melted (approximately 30 seconds).

  5. Serve warm, and enjoy!

Ingredients — Serves 4

  • 1 tbsp extra virgin olive oil

  • 2 tbsp butter

  • 6 medium onions thinly sliced

  • Salt and pepper to taste

  • 2 tsp fresh thyme chopped

  • 1 bay leaf

  • 1/2 cup dry sherry

  • 6 cups beef stock

  • 4 slices thick bread toasted

  • 2.5 cups Gruyere or Swiss cheese shredded
