Etouffee with Sweet Potato Veggie Spaghetti
In a large pan over high heat, sweat garlic, onion, celery and bell pepper until translucent.
Add sausage and stock and bring to a boil. Add roux 1 tablespoon at a time and whisk to avoid clumping.
When desired thickness is achieved, add seasonings.
Sever over Crazy Fresh Sweet Potato Veggie Spaghetti.

2 cups Onion
1 cup celery
1 cup bell pepper
1 cup sliced andouille
2 cloves garlic
4 cups Chicken Stock
1 cup dark roux
1 tablespoon chili garlic sauce
1 teaspoon thyme
1/2 teaspoon oregano
pepper to taste
Salt to taste
Hot sauce to taste
lemon juice to taste
2 packages Crazy Fresh Sweet Potato Veggie Spaghetti steamed or microwaved
