Etouffee with Sweet Potato Veggie Spaghetti


Instructions

  1. In a large pan over high heat, sweat garlic, onion, celery and bell pepper until translucent.

  2. Add sausage and stock and bring to a boil. Add roux 1 tablespoon at a time and whisk to avoid clumping.

  3. When desired thickness is achieved, add seasonings.

  4. Sever over Crazy Fresh Sweet Potato Veggie Spaghetti.

Ingredients — Serves 6

  • 2 cups Onion

  • 1 cup celery

  • 1 cup bell pepper

  • 1 cup sliced andouille

  • 2 cloves garlic

  • 4 cups Chicken Stock

  • 1 cup dark roux

  • 1 tablespoon chili garlic sauce

  • 1 teaspoon thyme

  • 1/2 teaspoon oregano

  • pepper to taste

  • Salt to taste

  • Hot sauce to taste

  • lemon juice to taste

  • 2 packages Crazy Fresh Sweet Potato Veggie Spaghetti steamed or microwaved
