Date Bread with Lemon Icing


Instructions

  1. Preheat oven to 350 degrees F and grease a 9x13 inch baking pan.

  2. In a large bowl, cream margarine and sugar. Gradually mix in eggs and vanilla. Stir in bananas.

  3. Sift together the flour, baking powder, baking soda, and salt. Stir into the sugar mixture. Fold in dates and chopped almonds

  4. Spread batter evenly into prepared baking pan. Bake in preheated oven for 30 to 35 minutes.

  5. Prepare icing while baking. In a small bowl, mix together salt and confectioners sugar. Stir in soft butter, lemon juice, and vanilla. Beat until smooth.

  6. Remove pan from oven. When cooled, spread the lemon icing over the top.

  7. Cut into squares and serve.

  • 1/2 cup butter

  • 1 1/2 cup white sugar

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 cup banana sliced

  • 2 cup flour all-purpose

  • 1 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp Salt

  • 1 cup dates pitted and chopped

  • 1/2 cup almonds chopped

  • 1/4 cup butter softened

Icing Ingredients

  • 1/8 tsp Salt

  • 2 tbsp lemon juice

  • 1/2 tsp vanilla extract

  • 1 1/2 cup confectioners' sugar
