Crusted Potatoes & Onions


Ingredients — Serves 4

  • 1.5 pounds red potatoes large dice

  • 1 large sweet yellow onion large dice

  • 1 tbsp vegetable oil

  • 2 tbsp butter

  • Salt and pepper to taste


  1. Heat a large skillet over medium-high heat.

  2. Add oil and butter to the pan. When the butter foams, add potatoes and onions to the skillet.

  3. Get some color on the potatoes and onions, then turn. Let them caramelize again.

  4. Keep turning the potatoes and onions for about 20 minutes until they are evenly golden and crusted.

  5. Salt and pepper to taste, and enjoy!
