Crazy Fresh Duck Breast
Ingredients — Serves 2
2 duck breasts
2 tablespoons butter
Salt and pepper to taste
Cut shallow perpendicular lines into skin side of duck breast and season with salt and pepper.
In a pan on very low heat, render the duck breast for 25 minutes. Removed duck from pan and pour out duck fat.
Turn the pan up to medium-high and allow pan to get up to temperature.
Put duck back into pan and sear until skin is brown and crispy. Turn breast over and add butter. Baste the duck until desired doneness. Treat like beef. If you like medium steak, you will like medium duck, etc.
