3 carrots peeled and sliced into 1/8 inch thick rings
3 tbsp butter
1 medium Onion very thinly sliced
1/2 tsp Salt
1 tbsp flavored or balsamic vinegar
1 tbsp chives finely chopped
Cook carrots in already boiling water 3 minutes then drain.
Get a sauté pan on medium heat add butter, onion, garlic and salt. Cook till onions are translucent.
Add carrots cover, cook over low heat 10 minutes or until carrots are tender.
Add vinegar. Toss to coat.
Place in serving dish and sprinkle with chives.
