Cantaloupe Salad with French Dressing

Ingredients

  • 6 cups baby arugula leaves

  • 8-10 strips cooked bacon

  • 1 whole avocado peeled, pitted and cubed

  • 1/4 cubed cantaloupe

  • 1/2 cup toasted slivered almonds

  • 1 clove garlic minced

  • 3/4 cup vegetable oil

  • 3 tbsp apple cider vinegar

  • 2 tbsp white sugar

  • 2 tsp paprika

  • 1 tsp Worcestershire sauce

  • 1/4 tsp dry mustard powder

  • 1/2 tsp Salt

  • 1 pinch cayenne pepper

Instructions

  1. Whisk the sugar, paprika, salt, mustard, vinegar, garlic, Worcestershire sauce, can cayenne pepper together in a mixing bowl. Slowly drizzle in the vegetable oil while whisking rapidly until the salad dressing is thick and creamy.

  2. Place the arugula leaves into a salad bowl. Sprinkle with the cantaloupe and avocado pieces.

  3. Drizzle with the salad dressing, then sprinkle with toasted almonds and bacon. Enjoy!
