Cantaloupe - Fennel Summer Salad


Ingredients — Serves 4

  • 1.5 lb Honeydew melon cut very thinly

  • 1/2 bulb fennel cut very thinly

  • 2 tbsp fennel fonds coarsely chopped

  • 1/4 cup green olives very coarsely chopped

  • 2 tbsp olive oil plus more for drizzling

  • 1 tbsp orange juice fresh

  • 2 tsp lemon juice fresh

  • 1 tsp orange zest finely grated

  • salt and petter to taste


  1. Make a vinaigrette by whisking orange juice, lemon juice, and oil in a large bowl. Season with salt and pepper.

  2. Add melon, fennel, and olives to vinaigrette, and toss to coat.

  3. Top salad with orange zest and fennel fronds. Drizzle with more oil, and season with salt and pepper. Enjoy!
