Broccoleaf & Roasted Squash

Ingredients — Serves 4

  • 1 bunch Broccoleaf de-stemmed and torn

  • 1 small butternut squash peeled and cubed

  • Salt and ground pepper to taste

  • 2 tablespoons Parmesan cheese grated


  1. Preheat oven to 400° F.

  2. Peel a small butternut squash and slice lengthwise. Scoop out the seeds and cut the squash into cubes.

  3. Combine squash with oil, salt, and pepper in a large bowl.

  4. Once the squash is well coated, roast it for 30 minutes on a baking sheet until tender and caramelized.

  5. After about 30 minutes, remove squash from oven and stir in the Broccoleaf. Return to oven until greens are tender (5-10 more minutes).

  6. Remove from oven and sprinkle with Parmesan cheese.
