Broccoleaf & Roasted Squash
Ingredients — Serves 4
1 bunch Broccoleaf de-stemmed and torn
1 small butternut squash peeled and cubed
Salt and ground pepper to taste
2 tablespoons Parmesan cheese grated
Preheat oven to 400° F.
Peel a small butternut squash and slice lengthwise. Scoop out the seeds and cut the squash into cubes.
Combine squash with oil, salt, and pepper in a large bowl.
Once the squash is well coated, roast it for 30 minutes on a baking sheet until tender and caramelized.
After about 30 minutes, remove squash from oven and stir in the Broccoleaf. Return to oven until greens are tender (5-10 more minutes).
Remove from oven and sprinkle with Parmesan cheese.
