Chicken Tortilla Soup w/ Mexican Salsa

Serves: 4-6 — Prep time: 24 hours — Cook time: 25-30 min

Ingredients

  • 1 Crazy Fresh Salsa Mexicana

  • 1 Cup Sweet Corn Kernels

  • 1 Cup Black Beans

  • 1/2 Cup Tequila

  • 32 oz. Chicken Stock

  • 2 lbs. Chicken Thighs

  • 1 Cup Chipotle in Adobo

  • 1/2 Cup Cilantro, chopped

  • 1/2 Cup Cotija Cheese

Instructions

  1. Blend chipotles in adobo, tequila and half of the cilantro until smooth

  2. Marinate chicken with adobo mixture for 24 hours.

  3. Simmer chicken stock in a large pot. Add salsa mexicana, corn and beans.

  4. Grill chicken, and add to soup.

  5. Enjoy!
