Chicken Tortilla Soup w/ Mexican Salsa
Serves: 4-6 — Prep time: 24 hours — Cook time: 25-30 min
1 Crazy Fresh Salsa Mexicana
1 Cup Sweet Corn Kernels
1 Cup Black Beans
1/2 Cup Tequila
32 oz. Chicken Stock
2 lbs. Chicken Thighs
1 Cup Chipotle in Adobo
1/2 Cup Cilantro, chopped
1/2 Cup Cotija Cheese
Blend chipotles in adobo, tequila and half of the cilantro until smooth
Marinate chicken with adobo mixture for 24 hours.
Simmer chicken stock in a large pot. Add salsa mexicana, corn and beans.
Grill chicken, and add to soup.
